Caprese Salad Recipe
This classic Italian salad combines simple ingredients to stunning effect - cool, creamy Mozzarella cheese is balanced by tangy fresh tomatoes and the Mediterranean warmth of Basil. Serves 4.
Ingredients
4 balls Mozzarella Cheese
500g good quality ripe Tomatoes. We like to use a mixture of sweet plum and cherry tomatoes for this recipe – for a really colourful dish, you could use a variety of different-hued heritage fruit.
Sea Salt
freshly ground Black Pepper
Extra Virgin Olive Oil
A large bunch of fresh Basil, leaves only, washed
Method
Cut the tomatoes in half, and any larger ones into quarters, then tip them into a large serving dish. Tear the mozzarella balls into roughly equal chunks and add to the dish, then season to your taste with salt and pepper and give everything a good drizzle of olive oil. Rip up the basil leaves and scatter them over the salad, then serve straight away with plenty of crusty bread to help you soak up all the lovely tomatoey juices.
