
Cooking Sausages on a Barbecue
Sausages are another barbecue staples. At Greendale we think it’s worth taking the time to make our own sausages, using meat from locally-raised animals.
The Greendale Farm Shop butchers have created several delicious recipes, from the traditional pork sausages to the contemporary sweet chilli sausages, and we offer gluten-free varieties, too.
First, read our handy guide to Getting the Most from a Charcoal Barbecue to get your charcoal properly ready (this usually takes about 30 minutes); you will need to prepare a slightly cooler area of the grill, where the charcoal is spread more thinly than the hotter, main cooking part. Using tongs, put the sausages on the hot part of the grill. Keep the sausages well apart, and turn them every two or three minutes until they are nicely browned all over. Move them across to the slightly cooler area of your grill, so that they can continue to sizzle away without burning (you will still need to turn them from time to time). Make absolutely sure that the sausages are cooked all the way through, then serve in a roll with your favourite sauce – delicious!

Pork Chipolatas Sausages
Slender and tasty, our Pork Chipolatas work well in slowly-cooked dishes – try them with mixed beans, onions, garlic, tomatoes and herbs for a delicious Provençal-style casserole.
