Halloumi Marinade

Chillies, herbs and lime add zest to delicious slices of savoury Halloumi. This recipe will make enough to marinade one 250g block of Halloumi.

Ingredients

1 Lime
6 tbsp Vegetable Oil
1 tsp Dried Chillies, crushed
1 tsp Dried Oregano
1 tsp Dried Mint
1 Garlic Clove, crushed
Halloumi
Freshly ground Black Pepper

Method

Finely grate the zest of the lime into a shallow dish, then squeeze its juice into a separate bowl. Whisk 6 tbsp of olive oil into the zest, then add half of the lime juice, together with the chillies, herbs, garlic and black pepper. Cut the block of halloumi into evenly sized, fairly thick slices (so that they won’t fall apart on the barbecue), then add the slices to the shallow dish, turning them to coat them completely. Leave to marinate for several hours before cooking.
