Serve a roast to remember with this impressive Rack of Venison. Our Venison comes from locally sourced deer, and is expertly matured for exceptional flavour. Each Rack of Venison is carefully French-trimmed, so that it will look amazing on the table and can be carved easily into cutlets to serve.

In the game season, our local supplier (based in mid_Devon) keeps us well stocked with carefully hung and matured venison.

Butcher's Tips

‘French trimming’ refers to the presentation of the meat, and simply means that the ends of the rib bones are left exposed after the fat has been trimmed away. To carve your cooked rack, just take a sharp knife and slice firmly downward between the bones to create individual cutlets.

How to Cook

To roast the Rack of Venison, cook it at a high heat (220°C/gas mark 7) for about 20 minutes if you like the meat to be fairly rare; leave it for 5_10 minutes longer if you prefer it well done. Remove from the oven, wrap in foil and leave to rest for up to 10 minutes so that the juices can suffuse the meat with their flavour.

Fresh Greendale Produce - Meat and seafood will be bagged and ready to cook or freeze on delivery. All fresh meat and fish will be vacuum-packed and labelled with use-by dates and a suggested frozen shelf life. Packaging or labelling may change depending on preparation or delivery limitations. When the meat or fish has been packaged it is immediately placed in an insulated envelopes and surrounded with chilled gel-packs to keep it cool and in perfect condition.
