Eggy Bread Recipe

Whether you know this brilliant breakfast treat as Eggy Bread, French Toast or any of its other names, there’s no denying it’s a delicious way to use up stale bread. Topping ideas are endless, but maple syrup is lovely, as are berries and yoghurt or a light dusting of cinnamon and icing sugar – why not make several slices so you can try them all!

Ingredients

1 large Egg
40 ml Milk
Small knob of Butter or Coconut Oil
2 slices Bread – soft white bread generally works better here, but feel free to experiment (slices of brioche loaf are particularly nice)

Method

*It’s worth having your toppings ready before you start to cook, as the bread won’t take long and you do need to keep an eye on it to make sure it doesn’t burn.*
In a large mixing bowl, whisk the egg and milk together until well combined. Tip the egg and milk mixture into a large, flat-bottomed baking dish or tray, then place the slices of bread in the dish.
Place a large frying pan over a medium heat and add the butter or coconut oil – while you wait for it to melt, flip the bread slices over so they can absorb liquid on both sides.
Put the slices of bread into the pan (you can cut them into smaller pieces if it helps them to fit) and fry for a minute or two, or until golden brown underneath. Turn the bread over and cook until golden on both sides, then transfer to serving plates, add toppings and enjoy!
