Veggie Burger Ideas

Having grown in popularity over many years, vegetarian and vegan diets are these days recognised as providing delicious, healthy and balanced alternatives to meat. There’s absolutely no reason why plant-based meals should be dull, uninventive or in any way ‘worthy’ – you can definitely still enjoy treats, like a tasty, hearty burger (and meat-free doesn’t have to mean the soya-protein-based supermarket option, either).

HALLOUMI BURGER

Halloumi cheese has long been a veggie ‘hero’ at carnivorous barbecues. Originally hailing from Cyprus, and traditionally made with sheeps’ cheese, Halloumi is certainly delicious, but you can enhance it further by marinating it for a few hours before grilling. Salty and robust, Halloumi pairs particularly well with sweet and sharp flavours – for a quick marinade, whisk together 2tbsp oil, 1tbsp lemon, a generous teaspoon of honey and half a teaspoon of Dijon mustard. Crush one or two garlic cloves into the mix, add salt and ground black pepper to taste, then whisk again. Cut the Halloumi into 1cm thick slices and place them in a small bowl or dish. Pour over the marinade, then put clingfilm over the bowl and leave it in the fridge to marinade for at least two hours (if you remember, turn the cheese occasionally). The Halloumi can then be grilled over hot charcoal or cooked in a griddle pan for a few minutes until both sides are golden brown, then served straight away in a bun or pitta pocket with crisp leaves and a few wafer-thin slices of sweet red onion.

PORTOBELLO MUSHROOM BURGER

Vegetables can also take a star turn, becoming the burgers themselves rather than being relegated to side-salads and other somewhat limp supporting roles. Many vegetables are especially good when sliced and barbecued or griddled, as the smoky flavour changes them into something new and delicious; sweet potato, butternut squash, carrots and even avocado pears can all be turned into really satisfying ‘burgers’. Try experimenting with marinades and dressings – you may well find yourself re-considering your beef burger habit!

Carrot & Butterbean Burgers

Miles away from shop-bought ‘meat-free’ options, these chunky burgers are as satisfying to eat as they are simple to make. You can prepare them ahead if you like, and they can also be frozen - just make the mixture into burgers, then freeze instead of baking.
