Origins

Greendale lamb is supplied by David Lockwood, who farms in nearby Aylesbeare. After enjoying the rich grazing pastures of East Devon, the lambs are carefully selected when they reach the correct weight; they are slaughtered at a local abattoir to keep stress to a minimum. Hung for a minimum of ten days, the meat becomes even more flavoursome and tender. Our master butchers then prepare it on_site at Greendale Farm Shop, skilfully turning it into plump chops, classic roasts, burgers, meatballs and much, much more.

Butcher's Tips

Shoulder of lamb is typically a slightly fattier part of the animal, and meat from this area is prized for its sweeter flavour. Try cooking it ‘low and slow’ in stews or casseroles to allow this flavour to develop fully.

How to Cook

For a simple, warming casserole, chop a selection of your favourite veg (we suggest potatoes, carrot, swede and red onion) and add mixed herbs and salt and pepper. Place in a deep casserole dish and sit the chops on top, then add enough water (or water with stock) to cover. Place a lid on the dish, put it in the oven and cook at 170°C/Fan 150°C/Gas Mark 3 for about two hours, until the meat is tender, then serve and enjoy!

Fresh Greendale Produce - Meat and seafood will be bagged and ready to cook or freeze on delivery. All fresh meat and fish will be vacuum-packed and labelled with use-by dates and a suggested frozen shelf life. Packaging or labelling may change depending on preparation or delivery limitations. When the meat or fish has been packaged it is immediately placed in an insulated envelopes and surrounded with chilled gel-packs to keep it cool and in perfect condition.
