Mother's Day Madness Chocolate Bark

This recipe involves melting chocolate – either in the microwave or over a pan of hot water – and then pouring it, so little ones will need adult supervision for the first stages. After that, they can really go mad and decorate the bark with Mum’s favourite sweet treats!

GIFT WRAP

Snap the set bark into shards, then wrap them in tissue or place them in a bag and tie with a ribbon for a delicious Mother’s Day gift

Ingredients

400g Dark or Milk Chocolate, depending on preference, broken into small pieces
100g White Chocolate, broken as above (if your Mum doesn’t like white chocolate, just leave it out)
To decorate: about 200g of your Mum’s favourite sweets (the more the merrier!). Small chocolates, popcorn, jelly sweets, pretzels, mini-eggs or broken chocolate bars are just a few suggestions.

Method

Take a baking tray roughly 22 x 32cm, cut out a sheet of baking paper large enough to cover the base of the tray, then put the paper in the tray. If using a microwave, break the milk or dark chocolate into a microwave-safe bowl and melt in 30-second bursts, stirring in between, until the chocolate is fully melted and looks glossy (repeat with a clean bowl for the white chocolate, if using).
To melt the chocolate on a hob, take two small saucepans (or one, if you’re not using white chocolate) and put about 4cm of water in each. Find two heatproof bowls that will sit snugly in the top of each pan without touching the water, then take the bowls off the pans and put the milk or dark chocolate pieces in one bowl, and the white chocolate (if using) in the other. Carefully place the pans on the hob and bring the water up to a gentle simmer – just barely bubbling – then set the chocolate bowls on the tops of the pans. Let the chocolate melt slowly, stirring regularly, until smooth and shiny.

Next, carefully pour the melted dark or milk chocolate on to the prepared baking tray, using a spatula to spread it out evenly across the baking paper. If using, take the melted white chocolate (you can re-heat it briefly if it has started to set) and blob it all over the top of the milk/dark chocolate, then use the handle of a teaspoon to swirl the two chocolates together. Finally, sprinkle over all the treats to make it a really special gift for your Mum – you can make patterns if you like, or just bung on as much as you can! Leave the chocolate bark to set at room temperature until firm (it will lose its gloss if refrigerated).
