Sweet Chilli Prawn & Mango Bites

These neat little bites are deliciously more-ish and relatively quick to make. To get ahead, toss the prepared mango in lime juice and cook the prawns a few hours before you plan to serve them, then refrigerate them in separate dishes and assemble when required.

Ingredients

3 tsps Sunflower Oil
½ tsp Sesame Oil
200g Greendale Raw Peeled King Prawns
2 ½ tbsps Sweet Chilli Jam
1-2 ripe Mangoes (depending on size)
1 Lime, zest and juice
Sea Salt and freshly ground Black Pepper
To assemble: small wooden skewers or cocktail sticks

Method

Place a large frying pan over a high heat and add both the oils. Let the oil get hot, then add the prawns. Cook them for about a minute, stirring gently, then fold in the chilli jam, add all of the lime zest and half of the lime juice, and season with a small pinch of salt and some black pepper. Continue to stir-fry the prawns for another couple of minutes until they are cooked, then tip them - together with their sticky glaze - into a shallow bowl to cool.

Carefully peel, stone and cut the mango into the same number of bite-sized chunks as you have prawns. Put the chunks into a bowl and pour in the rest of the lime juice, tossing the mango to make sure it is all covered in juice. Stir the prawns in their glaze so that they are evenly coated, then push one prawn and one piece of mango on to each of your skewers. Brush the prawns with any leftover glaze and serve.
