Sausage and Couscous Salad Recipe

A hearty salad for warmer days. We’ve chosen our Beef and Black Pepper Sausages for this recipe, but you can swap in any sausages you like. Don’t be tempted to skimp on the herbs, as they really make the flavours come together. Serves 4.

Ingredients

1 pack Greendale Beef and Black Pepper Sausages (you will need at least 4 sausages)
200g Couscous
250ml hot vegetable stock, made with boiling water
1 Lemon, zest and juice
4 tbsp Extra-Virgin Olive Oil
4 Large Tomatoes, chopped into fairly small dice
½ a Cucumber, sliced in half down its length, seeds scooped out and flesh cut into slices
Small bunch of Chives, finely chopped (or 3 Spring Onions, trimmed and finely sliced)
1 bunch Flat-Leaf Parsley, roughly chopped
8 Fresh Mint leaves, roughly chopped
Salt and Black Pepper, to taste

Method

Put the couscous into a deep bowl, and pour over the hot stock to cover it. Place a lid or plate over the bowl and leave for 10-15 minutes, until all the liquid has been absorbed and the couscous has swollen. Meanwhile, cook the sausages in your preferred way (to pan fry, heat a small splash of oil in a heavy-bottomed pan, then add the sausages and cook over a medium heat for 15-20 minutes, turning them regularly until nicely browned all over). You will need at least one sausage per person – more if you are all hungry! Allow the sausages to cool a little, then cut them into nice chunky slices.

To make the dressing, put the oil and the lemon zest and juice into a jug and whisk together, adding black pepper and salt to taste. Fluff up the couscous grains with a fork, then pour the dressing over it. Add the chopped tomatoes, the cucumber and the herbs (or spring onions if using) and stir well to combine, then tip the salad out on to a serving plate. Scatter the sausages slices over the top, and serve.
