Classic Mojito Recipe

Ingredients

Limes, cut into wedges
Medium bunch of fresh Mint, leaves only (retain a sprig for garnish, if wished)
2½ tsp granulated sugar
A handful of Ice
65ml/2½fl oz White Rum
Soda Water, to taste

Method

Put the lime wedges into a strong highball glass, and add the mint leaves and sugar. Carefully 'muddle' (mash) the three ingredients together with the end of a clean rolling pin, so that the limes release their juice and the mint is sufficiently bruised that it smells aromatic and fresh. Add the ice to the glass and pour over the rum, then splash in a little soda water, to taste, and stir. Garnish with a mint sprig if wished, and serve.
