Origins

Greendale lamb comes from our own flock of breeding ewes, which are predominantly traditional breeds such as Suffolk's and continental X's. After enjoying spring and summer grazing on the rich pasture at our East Devon farm, our lambs are carefully selected when they reach the correct weight - they travel just eight miles to a local abattoir, the short journey helping to keep stress to a minimum. Hung for a minimum of ten days, the meat becomes even more flavoursome and tender. Our master butchers then prepare it on-site at Greendale Farm Shop, skilfully turning it into plump chops, classic roasts, burgers, meatballs and much, much more.

Butcher's Tips

Good things come to those who wait! It takes a little patience to cook lamb shanks properly, but a long, gentle braising will allow the muscle tissue, fat and bone marrow to melt and meld into mouth-watering tenderness.

How to Cook

Preheat your oven to 170°C/gas mark 2. Heat a little oil in a heavy pan and add the lamb shanks, cooking over a high heat for a few minutes on each side until nicely browned. Peel and quarter red onions and place in a casserole dish with the browned meat; mix red wine, stock and your choice of herbs, then add to the casserole dish, ensuring the contents are well covered. Place the uncovered dish in the oven for 3-4 hrs, until the meat is meltingly tender and the onions have caramelised.

Fresh Greendale Produce - Meat and seafood will be bagged and ready to cook or freeze on delivery. All fresh meat and fish will be vacuum-packed and labelled with use-by dates and a suggested frozen shelf life. Packaging or labelling may change depending on preparation or delivery limitations. When the meat or fish has been packaged it is immediately placed in an insulated envelopes and surrounded with chilled gel-packs to keep it cool and in perfect condition.
