Ideas to use up stale bread

In the UK, bread tops the list of most-wasted household food items; we waste nearly 900,000 tonnes of bread each year (about 24 million slices every single day). Trying to act in the face of such huge numbers might seem futile, but by starting in your own kitchen you can play a part in reducing this waste. Click here to read our suggestions on using up stale bread.

One of the easiest ways to use less bread is to slice the loaf while fresh and then store in the freezer; frozen slices don’t take long to defrost for sandwiches, and if you want to make toast, the frozen slices can be toasted straight from the freezer. If you don’t fancy using the freezer for the whole loaf, why not freeze crusts or stale slices for use in salads, such as Panzanella and Fattoush, or for sweet or savoury Bread Puddings? You can also zap crusts and leftover bread into breadcrumbs and freeze them for future use – they’re a great ingredient to have to hand, as they’re needed in many dishes, from Kievs and stuffed vegetables to fritters and pasta, and they also make a delicious crunchy topping for bakes, like Macaroni Cheese. There are so many good reasons not to waste leftover bread - our tasty Romesco Sauce recipe is a great example!

*Please note; do not re-freeze breadcrumbs if making them from bread that has previously been frozen*
