
Beef Cushion with Mushroom & Mozzarella
Made by hand at here the Greendale Farm Shop, these tasty Beef Parcels are made with Top Rump of beef, sliced and rolled around a luscious Mozzarella and mushroom filling. A hearty dinner for any night of the week, cook them as they are or pop them in the freezer for a convenient ‘ready meal’ when you’re pushed for time.
Top Rump is very lean and tender – perfect for slicing and slow-roasting in these delicious parcels.
Preheat the oven to 180°C/ Gas Mark 4 and allow the parcels to come to room temperature, then brush them with a little oil and wrap in foil. Bake in the hot oven for 20-25 minutes until cooked through (any juices should run clear).
