Nothing Gets Wasted

Wastage poses a huge problem in the fishing industry. Fish is a valuable natural food resource, but unfortunately its quality starts to deteriorate naturally from the moment it is caught. With this in mind, our larger boats place fish catches on ice as soon as they’re brought aboard, while our smaller vessels make shorter trips and return to port daily with new catches, so that fresh fish can often be on its way to Greendale Farm Shop within hours of leaving the sea. At the Farm Shop, we endeavour to make sure our fish reaches customers in as fresh a state as possible; fresh fish is available from our counter daily, with online orders delivered via an overnight service, and fresh fish is also an important ingredient for our café & restaurant and (of course) our takeaway fish & chips service. The Greendale fishmongers are skilled at keeping waste to a minimum, and ensure that quality fish is never discarded unnecessarily, for example by using filleting offcuts in our ready-made fish pies, fish pie mixes and fish cakes - even empty crab and lobster shells are used to add flavour to bisque and fish stock. Finally, all remaining fish waste is collected from Greendale by Advanced Proteins, which processes animal waste into bio-fuel and key pet-food ingredients.
