
Bellini Cocktail Recipe
Over 80 years old and still going strong, this simple, summery cocktail is a breeze to make (and it’s a great way to make the most of any over-ripe peaches, too). Serves 2.
Ingredients
1 large ripe Peach, peeled, halved and stoned
1 bottle chilled Champagne or sparkling wine
Method
If you have time, you can put two champagne glasses into the fridge to chill, but this step is not essential. Put the prepared peach in a blender and purée until completely smooth (this may take a couple of minutes). Divide the purée between two champagne glasses and then carefully top up with the chilled champagne, stirring as you pour (aim for about one-third peach purée to two-thirds champagne). Serve straight away.
