Figs With Goats Cheese, Walnuts & Honey

This easy recipe is vegetarian-friendly, no-cook and fuss-free –and did we mention that it also tastes delicious, too? You can vary the nuts and cheese if you like (blue cheese is a delightful option), but do check that the cheese is not made with animal rennet if you need to keep the recipe vegetarian. Makes 16.

Ingredients

8 ripe Figs

100g vegetarian soft Goat's Cheese, any rind removed (we like Cricket St. Thomas Capricorn)

2 tbsp Runny Honey

25g Walnuts, crumbled into little pieces

2-3 sprigs Thyme, leaves only

Sea Salt and freshly ground Black Pepper

Method

Cut the figs in half lengthways and put them on a serving dish, cut-side up. Cut the goat’s cheese into eight equal pieces, then cut each piece in half again. Gently press a piece of cheese on to each fig half, then season them all to taste with salt and pepper. Drizzle a little honey over each fig, then scatter over the walnut pieces and thyme leaves. Serve straight away, or chill until needed (if there’s time, let them come up to room temperature before serving).
