Super Slaw with Spicy Dressing Recipe
This light and delicious slaw makes a pleasant change from the standard mayonnaise-laden recipe – we like to serve it alongside our Chinese-Style Pork Ribs. If you have a grating attachment for your food processor, it will speed this recipe up considerably. Serves 4 as part of a meal.
Ingredients
For the slaw:
½ a Red Cabbage, washed and shredded finely
½ a White Cabbage, washed and shredded finely
3 Carrots, scrubbed, trimmed and grated
10 Radishes, washed, trimmed and sliced into fine discs (a mandolin is good for this)
4 Spring Onions, washed, trimmed and sliced finely
A large handful of Bean Sprouts (or other sprouts – Alfalfa is good)
Small bunch of fresh Coriander, washed and chopped
1 tbsp Black Sesame Seeds
For the dressing:
2 tbsps Sunflower Oil
1 tbsp Sesame Oil
1 tbsp Rice Wine Vinegar
1 tbsp Soy Sauce
2 tsp Agave Nectar or Runny Honey
1 Lime, zest and juice of
1 large or 2 small cloves Garlic, crushed
Method
Prepare all the vegetables as above, then put everything into a large serving bowl and mix it together gently. To make the dressing, place all the dressing ingredients in a jug or small bowl and whisk together until well combined. Pour about half of the dressing over the veg and toss the salad until lightly coated, then serve straight away with the remaining dressing alongside.
