Grilled Balsamic Mushroom Skewers

Simple but tasty, this vegetarian recipe will have even meat-eaters asking for more! Serves 4

Ingredients

900 grams mushrooms, thickly sliced
2 tablespoons balsamic vinegar
1 tablespoon soy sauce (or tamari)
3 cloves garlic, chopped
1/2 teaspoon thyme, chopped
salt and pepper to taste

Method

Marinate the mushrooms for 35 minutes. Skewer the mushrooms and grill over medium-high heat until just tender and slightly charred, about 2-3 minutes per side. If you like using wooden skewers, remember to soak them in water for about an hour before using them on the grill.
