A whole White Turkey with the legs and wing tips removed, the Turkey Crown is an on-the-bone joint of tender white breast meat. Prepared with delicious chestnut, cranberry and apple stuffing, it’s ready to roast – just add all your favourite trimmings. Supplied without giblets.

Greendale Turkeys are sourced either from our own farm in nearby Woodbury Salterton, or from the Slade family at Rosamondford Farm, a mile away from Greendale Farm Shop. Raised from day-old chicks, the White Turkeys are fed a simple, additive-free diet of wheat and vegetables and live comfortably in specially-designed barns. Their simple, natural diet results in superbly flavoured meat, perfect for a traditional Christmas roast.
You can prepare a Turkey crown for cooking in the same way as you would a whole bird, for example rubbing seasoned butter over the skin or draping thin slices of bacon over it.
Cooking times will vary according to the weight of your Turkey or Turkey joint, but as a guide it is a good idea to allow 20 minutes per Kg, plus 70 minutes if the bird or joint is under 4Kg, or plus 90 minutes if it is over 4Kg, at a cooking temperature of 190°C/350°F/Gas Mark 4.Preheat your oven to 190°C/350°F/Gas Mark 4, then weigh the Turkey Crown to calculate the cooking time (as above). Prepare the Crown in your preferred way (rubbing butter over or under the skin; laying bacon over the skin; adding stuffing at the neck end of the Crown, or using it to make a ‘bed’ for the Crown to cook on), then put it in a roasting tin, cover with foil and place in the hot oven. Cook for the calculated time, removing the foil 30 minutes before the end of cooking and spooning some of the juices over the Crown. The meat is cooked if the juices run clear when the thickest part of the joint is pierced with a clean skewer or sharp knife. When it is cooked, remove the Turkey Crown from the oven and let it rest for 15 minutes in a warm place before carving.

Fresh Greendale Produce - Meat and seafood will be bagged and ready to cook or freeze on delivery. All fresh meat and fish will be vacuum-packed and labelled with use-by dates and a suggested frozen shelf life. Packaging or labelling may change depending on preparation or delivery limitations. When the meat or fish has been packaged it is immediately placed in an insulated envelopes and surrounded with chilled gel-packs to keep it cool and in perfect condition.
