Jamaican Jerk Spatchcock Chicken

Greendale poultry products are sourced from our carefully chosen suppliers. One such supplier is Creedy Carver, based at Merrifield Farm in Crediton, Devon. Peter and Sue Coleman pride themselves on producing top_quality chickens whilst maintaining a very sympathetic approach to bird welfare. From one day old, their chicks remain in temperature_controlled brooder units; at 28 days old they’re moved to free range units, which are either straw_bale shacks or special chicken arks. From here, they can roam grassy fields while enjoying protection from predators and the elements, thanks to their specialist housing. The birds are fed a low_density diet free from GM ingredients, additives or antibiotics, which allows them to grow more slowly, reaching maturity at their own pace. This simple lifestyle and natural environment combine to produce the delicious_tasting chicken that Greendale customers love.

‘Spatchcocking’ is pretty much the same technique as butterflying; the chicken’s backbone is removed and the bird is opened out and flattened. Despite looking a little ‘squashed’, this is still a whole bird with meat on_the_bone, which ensures a juicy and delicious result when cooked.

The flatter shape of a spatchcocked chicken means it has a shorter cooking time than a standard roast chicken. To oven roast, cook at 180°C (Gas Mark 4) for about 45 minutes, until any juices run clear. To barbecue, place on the grill above properly prepared hot charcoal and cook for about 45 minutes, again checking that the meat is cooked through and any juices run clear before serving.
