Serves 2 - 4
Our Free-Range Bronze Turkey Crown is a whole Turkey with the legs and wing tips removed, leaving an on-the-bone joint of tender white breast meat. It won’t need as long in the oven as a whole bird, is easier to carve and also tends to produce fewer leftovers, making it the ideal choice for smaller gatherings. Supplied ready to roast, with giblets removed and packaged alongside.

Greendale Turkeys are sourced either from our own farm in nearby Woodbury Salterton, or from the Slade family at Rosamondford Farm, a mile away from Greendale Farm Shop. Raised from day-old chicks, the Turkeys are fed a simple, additive-free diet of wheat and vegetables (with no growth hormones or other drugs), and enjoy foraging in large, open paddocks. Their simple, natural lifestyle results in superbly flavoured meat, perfect for a traditional Christmas roast. Every Turkey sold comes with a guarantee of quality.
You can prepare a Turkey crown for cooking in the same way as you would a whole bird, for example rubbing seasoned butter over the skin or draping thin slices of bacon over it.
N.B. weights include stuffing; times are based on an oven preheated to 180°C (160°C Fan, Gas Mark 4). If your turkey weighs less than 4.5kg, cook it for 45 minutes per kilo, plus an extra 20 minutes. If your turkey weighs between 4.5kg and 6.5kg, cook for 40 minutes per kilo. If your turkey weighs over 6.5kg, cook for 35 minutes per kilo. To help keep the meat moist, use the juices to baste it every 30 minutes. You can also cover the turkey with foil during cooking, but remove the foil for the final 30 minutes to ensure golden-brown skin. To make sure the turkey is cooked through before serving, use a skewer to pierce the thickest part of the thigh and check whether the juice runs clear; if it does, the turkey is ready. If the juice is pink, return the turkey to the oven for another 15 minutes before testing again; continue to do this until the juice runs clear. When the turkey is cooked through, transfer it to a serving dish and cover with foil, then set aside to rest in a warm place for at least 30 minutes.
