From the best part of the fillet, this luxurious steak cut is trimmed of fat and prepared by our expert butchers. An elegant stand-alone roast, this show-stopping Beef Wellington log is made the from a traditional recipe in which the fillet is encased in rich mushroom paté and wrapped in buttery puff pastry.
Please note our Beef Wellington Logs are freshly made. If ordering please allow a couple of days before delivery and collection.
We raise our own beef cattle on our family farm in East Devon, where the pastures overlook the Jurassic coast. From our careful breeding program to the home-grown diet our animals receive, the management of our herd is carried out according to strict animal welfare guidelines, including those required by the Red Tractor Food Assurance Scheme. We use an abattoir less than eight miles away from our farm, minimising this potentially stressful journey for the animals; on reaching Greendale Farm Shop, each carcass is hung and dry-aged for a minimum of three weeks, to allow it to mature, then expertly prepared by our skilled butchers. We take great pride in all our beef here at Greendale – not only because it’s exceptionally delicious and tender, but also because it’s fully traceable back to our farm.
This beautifully lean and tender cut of beef comes from a muscle that does very little exercise during the animal’s lifetime. A little bit of luxury, it definitely deserves centre stage on your table.
To roast the Log Fillet, preheat the oven to 220°C/gas mark 7. Rub a little oil on the fillet, then sear it quickly in a heavy-based pan over a high heat, turning regularly until browned all over. Transfer the fillet to a roasting tin and cook in the hot oven for 20 minutes if you like it cooked rare, or 25 minutes if you prefer medium-rare. Then remove the fillet from the oven and cover loosely with foil, allowing it to rest for a good 15 minutes before serving.
