Product description

Hailing from the Swiss Jura, Vacherin Mont d'Or is a soft, voluptuous cows’ milk cheese with a rich, subtly sweet taste. The cheeses are rind-washed as they mature, then wrapped in Spruce-bark containers. The Spruce bark supports and also imparts flavour to the cheese, which can be very runny when ripe. To serve, leave the cheese in the wooden container, cut the rind off the top and scoop out with a spoon – alternatively, Vacherin Mont D’Or can be baked whole in its box. Supplied in a Spruce-bark case.

Origins

Vacherin Mont d’Or is made seasonally - between August and March - in the French Jura. The cows are grazed on the lower French Alps, where the grass is lush with melt; this makes their milk particularly rich, and a small handful of artisan cheesemakers put it to good use to produce a cheese that’s voluptuous in texture and full of flavour.
