Tender shoulder of lamb is taken off the bone, then wrapped carefully around a Moroccan-spiced stuffing and hand-tied to make this deliciously plump cushion. Roast it with a selection of your favourite veg, and serve with fresh mint sauce for a celebratory dinner with a difference!
Greendale lamb comes from local breeding ewes, which are predominantly traditional breeds such as Blackface. After enjoying grazing on rich Devon pasture, the lambs are carefully selected when they reach the correct weight - they travel just eight miles to a local abattoir, the short journey helping to keep stress to a minimum. Hung for a minimum of ten days, the meat becomes flavoursome and tender. Our master butchers then prepare it on-site at Greendale Farm Shop, skilfully turning it into plump chops, classic roasts, burgers, meatballs and much, much more.
Preheat the oven to 190°C/350°F/Gas Mark 4. Place the Cushion in a roasting tin and cook for 45 minutes to an hour, basting it once or twice with its juices if wished. The meat is cooked when, if it is pierced with a clean skewer, the juices run clear. When it is cooked, remove the Cushion from the oven and let it rest for 15 minutes in a warm place before serving.
Store in fridge and consume within 2-3 days of receipt, or freeze immediately. Suitable for freezing. All items are labelled with use by dates.

Fresh Greendale Produce - Meat and seafood will be bagged and ready to cook or freeze on delivery. All fresh meat and fish will be vacuum-packed and labelled with use-by dates and a suggested frozen shelf life. Packaging or labelling may change depending on preparation or delivery limitations. When the meat or fish has been packaged it is immediately placed in an insulated envelopes and surrounded with chilled gel-packs to keep it cool and in perfect condition.
