Made from two prime racks of lamb, the Guard of Honour is a stunning centrepiece for any celebratory dinner. The rib bones are carefully ‘French-trimmed’ by our butchers, and interlocked for superb presentation; a delicious crust of parsley and mixed herbs adds the perfect finishing touch.

Origins

Greendale lamb is supplied by David Lockwood, who farms in nearby Aylesbeare. After enjoying the rich grazing pastures of East Devon, the lambs are carefully selected when they reach the correct weight; they are slaughtered at a local abattoir to keep stress to a minimum. Hung for a minimum of ten days, the meat becomes even more flavoursome and tender. Our master butchers then prepare it on-site at Greendale Farm Shop, skilfully turning it into plump chops, classic roasts, burgers, meatballs and much, much more.

Butcher's Tips

The Guard of Honour is usually tied with string to keep everything in place, so remember to remove this before beginning carving. When you carve, it is easiest if you treat the two sides as one single piece of meat, cutting down through the ribs on both sides simultaneously.

How to Cook

As a rough guide, to roast a lamb joint allow about 35 minutes’ cooking time per kilo in weight (or about 15 minutes per pound). Place in a preheated oven at a high temperature initially (230°C/gas mark 8), then after about 15 minutes, lower the temperature (to 200°C/gas mark 6) for the remainder of the cooking time.

Fresh Greendale Produce - Meat and seafood will be bagged and ready to cook or freeze on delivery. All fresh meat and fish will be vacuum-packed and labelled with use-by dates and a suggested frozen shelf life. Packaging or labelling may change depending on preparation or delivery limitations. When the meat or fish has been packaged it is immediately placed in an insulated envelopes and surrounded with chilled gel-packs to keep it cool and in perfect condition.
