Goat’s milk blue cheeses are something of a rarity in the UK, so Harbourne Blue is truly special. Made by hand here in Devon, the cheese takes around 10 weeks to mature, developing a delicate sweetness and a crumbly texture. Made with pasteurised milk, it is supplied wrapped in waxed paper.
Harbourne Blue is one of three cheeses made by Ben Harris and his team at Ticklemore Dairy in Devon. The Dairy was set up over thirty years ago by Robin Congdon to make blue cheeses using similar techniques to Roquefort. Harbourne follows the same recipe, but uses goat’s milk, which gives it a style entirely of its own.
Ticklemore Dairy does not produce its own goat’s milk; instead, it is bought in from local goat farmers Sue and Will Thomson-Coon of Button Farm in Buckfast, on the edge of Dartmoor. The milk is pasteurised and the cultures are added to it, enabling a quick-set curd. The cheese is then cold matured at around 5°C, so the flavours and the blue develop slowly - a method traditionally used in Roquefort maturation. Sometimes the blue mould can develop a slight peppery spice, a contrast against the clean paste.

Standard National Delivery From £7.95 - Order before 2pm and receive your items the next day, between 8am and 8pm. You can also specify whether you’d like it delivered in the morning or on a different day (Tuesday to Saturday).
Fresh Greendale Produce - Meat and seafood will be bagged and ready to cook or freeze on delivery. All fresh meat and fish will be vacuum-packed and labelled with use-by dates and a suggested frozen shelf life. Packaging or labelling may change depending on preparation or delivery limitations. When the meat or fish has been packaged it is immediately placed in an insulated polystyrene box and surrounded with chilled gel-packs to keep it cool and in perfect condition.
