Origins

THE RUM

Unlike other producers, Daymark distill using pure molasses to make their rum. Using copper stills in the triple distillation process, they cook up mouthwatering notes of dried fruit, cracked caramel and treacle. For their Original, they pair these smooth, warming flavours with fresh rock samphire, foraged from the seashore at the bottom of our garden. And what could be simpler than sea water and sunshine to create the pinch of salt that gives our rum its unique flavour?

Overlooking the daily ebb and flow of the tide, the St Martin’s Daymark continues to guide mariners around the stunning archipelago of the Isles of Scilly. Arriving by boat or plane, catching the first glimpse of the Daymark is a sign for locals and visitors alike to slip into the island way of life. Fresh Greendale Produce - Meat and seafood will be bagged and ready to cook or freeze on delivery. All fresh meat and fish will be vacuum-packed and labelled with use-by dates and a suggested frozen shelf life. Packaging or labelling may change depending on preparation or delivery limitations. When the meat or fish has been packaged it is immediately placed in an insulated envelopes and surrounded with chilled gel-packs to keep it cool and in perfect condition.
