
Halloumi Burgers with Tomato Salsa
It’s difficult to imagine any veggie BBQ spread without halloumi, and for good reason - when it’s cooked right, it’s hard to beat! Firm, flavourful and quick to cook, it’s ready in minutes, so be sure to get the rest of the ingredients prepped and ready to serve before the halloumi hits the grill.
Makes 4 burgers.
Ingredients
2 tbsp Sunflower or Olive oil
1 x 250g block Halloumi Cheese
For the Salsa:
1 small Red Onion, peeled, trimmed and chopped finely
4 Vine Tomatoes, chopped finely
2 tbsp finely chopped fresh Basil (also works well with fresh Coriander, Parsley or Mint)
2 tsp Red Wine Vinegar
1 tbsp Olive Oil
Salt and Black Pepper, to taste
To Serve:
4 Brioche Buns (or other soft burger buns)
4 tbsp Hummus
4 large Lettuce Leaves (Cos or Romaine are ideal)
Method
If using a barbecue, light it well in advance so that the coals come up to cooking temperature before you start (see our handy guide to getting the most from a charcoal barbecue to learn more). Mix together the salsa ingredients and set aside for the flavours to develop, then slice the buns in half and roughly tear the lettuce leaves. Cut the halloumi block into eight even slices.
When the barbecue is ready, brush the halloumi slices all over with olive oil, then place on the grill and cook for 2-3 minutes on each side until golden. (If cooking on a hob, heat the oil in a frying pan, then add the halloumi and cook as per the barbecue until golden.)
If you like, toast the buns very briefly on both sides (being very careful not to burn them), then spread the bottom of each bun with 1 tbsp of hummus. Add two halloumi slices to each bun, then top with the torn lettuce and a good dollop of salsa. Put the top half on each bun, and serve straight away.
