As you’ll know, our weekly email always includes a few recipe ideas, created with Greendale produce. We loved finding out which recipes were the most popular with customers throughout the year, and the results were not always easy to predict – our recipe ‘top ten’ may surprise you!

1. Paprika Greendale Pork with Red Peppers Recipe

Rustle up a quick, tasty weeknight meal with this easy pork recipe. Don’t be put off by the amount of paprika used - the delicious smoky flavour marries perfectly with the rich meat and sweet peppers.

2. Greendale Monkfish with Parma Ham & Pesto

Great to look at and even better to eat, these Parma-ham wrapped monkfish parcels look way more labour-intensive than they are – perfect if you want to impress! Serve with some simply-dressed salad leaves and a wedge or two of fresh lemon

3. GREENDALE CRAB THERMIDOR

If you’re a fan of our Lobster Thermidor, why not try this delicious crab-centric version? Rich, creamy and packed with flavour, it’s delicious served with fresh bread for mopping up every last bit!

4. WEST COUNTRY APPLE CAKE

Various time-honoured versions of this recipe can be found all over the UK, with Dorset, Devon and Somerset all having a particularly strong tradition of apple cakes. For the sake of diplomacy we’re calling ours ‘West Country Apple Cake’

5. GREENDALE BEEF GOULASH

Flavoured with two types of paprika and packed with plenty of veg, this rich, warming beef stew is inspired by the traditional Hungarian Gulyás. Don’t let the list of ingredients or the cooking time put you off – it’s well worth the wait!

6. MITCH TONKS’S BAKED LEMON SOLE WITH BUTTER LEMON AND PARSLEY

Flatfish lend themselves beautifully to being cooked whole, as this tasty, faff-free recipe from celebrated chef Mitch Tonks illustrates. Serve with plenty of bread for mopping up all the delicious juices.

7. CHICKEN LEEK & POTATO POT PIE

This delicious, savoury pie is pretty straightforward to put together (you can even make the filling ahead of time and refrigerate it until needed). Serve with salad or your favourite seasonal veg.

8. QUICK CRAB GRATIN

We know the crab on our fish counter is super-fresh because it’s caught locally by the Greendale fishing fleet. This simple, fuss-free recipe comes highly recommended by Ethan, our Fishmonger, as a delicious way to enjoy crab.

9. MOROCCAN FISH STEW

Inspired by the classic Moroccan Tagine, this spicy, warming stew is just the ticket for cold evenings. We’ve used Whiting for this recipe, but you can happily substitute Hake, Pollock or any other sustainably-fished white fish.

10. PORK & LEMON CASSEROLE

Made with fresh lemon zest and simmered ‘low and slow’, this simple but delicious recipe produces a mouth-wateringly tender finished dish.


 

Greendale pork recipes were our biggest success in 2022, with Paprika Greendale Pork with Red Peppers topping the chart, and our Pork & Lemon Casserole coming in tenth (Pork Stroganoff just missed out, in eleventh place!). Always a customer favourite, our East-Devon pork is lean, nicely marbled, and exceptionally well-flavoured – it really shines in stews and casserole-type recipes like these.

Unsurprisingly, Greendale seafood also made a strong showing, accounting for half of this year’s top 10 favourite recipes. Monkfish, crab and lemon sole, all caught by our own fishing boats, were particular favourites; our Monkfish with Parma Ham and Pesto topped the seafood recipes, and Crab Thermidor was also a big hit. Greendale seafood is tasty, great quality and easy (and often quick) to cook - it’s easy to see why customers love it so much!

Interestingly, our customers don’t seem to have too much of a sweet tooth - only one sweet recipe made the top ten, though it did come in at a very respectable fourth place; our West Country Apple Cake recipe is a much-loved classic (with the added bonus that it’s easy to tweak to suit personal tastes). A simple, delicious cake that can be made with local produce – and served with a healthy dollop of West Country clotted cream! – we’re really pleased to see it in our customers’ top ten.
